A Delicious October Treat

                October is here and that means that the spotlight is on our bright orange veggie, the pumpkin. Pumpkin pies, jack-o-lanterns, and even pumpkin spice cappuccinos are a few of the different ways the pumpkin makes an appearance in October. But have you ever heard or Pumpkin Nut Bread? If you haven't, try this recipe to make your own delicious Pumpkin Nut Bread!

Pumpkin Nut Bread

                Ingredients:

·         2 cups of flour

·         2 teaspoons of baking powder

·         ½ teaspoon of salt

·         ½ teaspoon of baking soda

·         ½ teaspoon of allspice

·         ½ teaspoon of cinnamon

·         1 cup packed brown sugar

·         ½ cup of shortening

·         2 eggs

·         1 can of canned pumpkin (solid works best)

·         ½ cup of milk

·         ½ c of pecans

Mix all dry ingredients (flour, baking powder, salt, baking soda, allspice, and cinnamon) together and set aside in a large mixing bowl. Beat together brown sugar and shortening in another bowl until it is well combined. Beat in eggs. Add the canned pumpkin and milk. Mix well. Add dry ingredients and again, mix well. Stir in chopped pecans. Pour mixture into greased bread pan. Bake at 350° for 55-60 minutes.
